1-Avocado Eggrolls from The Cheesecake Factory
 

Made with egg rolls, avocados, and veggies, recreate this beloved vegetarian snack at home in just 20 minutes.

Ingredients:

Cilantro dipping sauce:
¾ cup fresh cilantro leaves, chopped
⅓ cup sour cream
2 tablespoons mayonnaise
1 garlic clove
2 tablespoons lime juice
Salt and pepper, to taste

Egg roll:
1 cup of vegetable oil
3 avocados, peeled and seeded
1 Roma tomato, minced
¼ cup red onion, minced
2 tablespoons fresh cilantro leaves, diced
2 tablespoons lime juice
Salt and pepper, to taste
8 egg roll wrappers

Preparation:

Mix together the ingredients for the cilantro dipping sauce in a bowl. Set aside.
Preheat a large pot with oil over medium-high heat. Oil temperature should reach 350°F and there should be enough oil to cover the rolls, about 3 to 4 inches deep
Mash avocados in a bowl. Mix in tomato, red onion, cilantro, and lime juice. Add salt and pepper, to taste.
Position avocado mixture onto the middle of an egg roll wrapper. Fold wrapper on top of mixture and roll until the mixture is fully wrapped. Secure edges of the wrapper by pressing with water using your finger. Repeat for the remaining mixture and wrappers.
Deep-fry rolls in the pot of hot oil for at least 2 minutes or until all sides are golden brown.
Remove from pot with tongs and place onto a plate lined with paper towels.
Serve with the cilantro dipping sauce on the side.

Ingredients:

1 10-ounce bag spinach, diced
2 14-ounce cans artichoke hearts, diced
1 cup Parmesan-Romano cheese mix, grated
2 cups mozzarella cheese, grated
16 ounces garlic alfredo sauce
8 ounces cream cheese, softened

Preparation:

Combine all ingredients in a bowl. Mix well.
Transfer into a slow-cooker. Set on high and cook for 30 minutes.
Serve while hot.

 Ingredients:

⅔ cup all-purpose flour
2 large eggs
¼ cup milk
1 cup Japanese breadcrumbs
½ cup Parmesan cheese, shredded
1 tablespoon dried parsley
½ teaspoon garlic salt
½ teaspoon seasoning salt
8 pieces mozzarella string cheese
1-quart vegetable oil
Marinara sauce

Preparation:

Add flour to a bowl. Then, in a separate bowl, mix eggs and milk. Add breadcrumbs, Parmesan, parsley, garlic salt, and seasoning salt in a third bowl and mix well.
Line baking sheet with wax paper. Set aside.
Cut mozzarella pieces in half vertically so that you will end up with 16 mozzarella sticks. Then, for each piece, dredge first in flour, followed by egg wash, and third in breadcrumb mixture. Dredge again in egg wash and breadcrumbs for a thicker coat. Place pieces on a prepared baking sheet and place in freezer for at least 1 hour or overnight.
To prepare mozzarella sticks to preheat deep fryer to 350°F.
About 4 sticks at a time, deep fry for about 30 seconds or until golden brown. Using a slotted spoon, transfer to a rack or plate lined with paper towels to drain.
Serve warm with marinara sauce.
